Clean and wash chicken (for a more seasoned taste make lengthway slits in the flesh).
Rub Tex's Jamaican Jerk Seasoning thoroughly onto the chicken and into the slits. Place chicken pieces into a container. Cover with foil. Marinate for 2 hours or overnight in the fridge.
Preheat oven to 190?C/375?F/Gas Mark 5. Place chicken pieces in a roasting tray and brush oil over chicken. Bake in the oven, turning frequently until cooked. To barbeque or grill, place chicken over hot charcoal fire or under hot grill until cooked through and the juices run clear when pierced.
Delicious when served with freshly baked bread and salad.
