B's Irie Wet Seasoning

Ingredients

2 large cloves of garlic, minced or chopped finely 1 large onion, chopped finely 4 stalks eskellion, chives or spring onion, chopped finely including green tops 1 small scotch bonnet pepper, de-seeded and chopped finely 1 sprig of thyme, finely chopped A dash of Worcestershire sauce 4 heaped tbsp Tex's Tropical Multi-Purpose Seasoning 1 tbsp ground pimento

Preparation

Ensure all ingredients are chopped finely then mix together. Place the mixture in a sealed container and keep refrigerated. Rub onto fish, meat, poultry prior to cooking - great when used in marinades. Incisions may be made into meat and the seasoning rubbed in. For the flavour to penetrate deeper, leave marinade standing for at least one hour. Try this seasoning on your Sunday Roast - make incisions in beef, rub all over with Tex's Tropical Multi-Purpose Seasoning then stuff incisions with B's Irie Wet Seasoning. Leave to marinate for at least 1 hour before oven roasting.
