Sandy Island Curry Lamb

Ingredients

1 kg lamb, de-boned and cut into strips 1 large onion, peeled and sliced 3 heaped tbsp Tex's Jamaican Style Curry Powder 2 tbsp Tex's Tropical Multi-Purpose Seasoning 60g mushrooms sliced (canned mushrooms can be substituted) 6 small potatoes, peeled and quartered 1 oz plain flour 1 can tomatoes in tomato juice Oil for frying

Preparation

Put all ingredients except oil in a bowl. Mix well and leave to marinate for about 1 hour. Heat oil in a pan. Shake off excess seasoning from lamb strips and fry until golden brown. Remove and drain off excess fat. Transfer lamb to casserole dish, then add all ingredients and thicken with flour. Bake in a preheated oven for 90 minutes at 180?C/350?F/Gas Mark 4. If desired, more Tex's Jamaican Style Curry Powder and Tex's Tropical Family Seasoning can be added to taste.
