Ingredients

250g saltfish (salted cod) 1 egg, beaten 2 medium sized onions, chopped finely 1 stalk eskellion or spring onion, chopped finely 1 tbsp Tex's Jamaican Style Curry Powder 2 tbsp Tex's Family Chicken Seasoning 250g self raising flour 1 small slice red hot pepper, finely chopped (optional) 1/2 cup milk Water for mixing Oil for frying

Preparation

Soak fish in cold water overnight. Drain and rinse off before boiling in fresh water for about 30 minutes - taste water; if still salty, drain off water, cover with fresh water and bring to boil again for about 15 minutes, then drain water thoroughly. Discard all bones and skin and flake fish (not too fine). In a bowl place all ingredients except flour. Add saltfish and mix together. Gradually add flour and mix. Add sufficient water for a thick batter. The mixture should drop easily from spoon. Heat oil in frying pan and drop by spoonful into hot oil. Fry until golden brown on both sides. Drain on absorbent paper. Best served warm.
