Ingredients

1kg chicken breast, de-boned and cut into cubes 2 tbsp soy sauce 1 heaped tbsp Tex's Original Fried Chicken Coating 1 cup water 2 medium sized onions, peeled and chopped into chunks 3 heaped tbsp Tex's Exotic Curry Seasoning 2 cloves garlic, chopped finely (optional) 2 tbsp tomato puree 1 small sweet red pepper, de-seeded and chopped Oil for frying

Preparation

Put all ingredients in a bowl and rub together well. Leave to marinate for about 1 hour if desired. Heat oil in a pan. Shake off excess seasoning and fry chicken for about 10 minutes to seal the moisture in. Drain off excess oil, add the marinade and water to the pan and cook on a low heat for about 1 hour until tender. Serve on a bed of white rice.
