1kg chicken pieces 1 onion, sliced 3 cloves garlic, grated or finely chopped 2 stalks eskellion or spring onion, chopped 1 cup chicken stock 2 tbsp tomato ketchup 2 tbsp soy sauce (optional) 4 tbsp Tex's Family Chicken Seasoning 1 tomato, chopped 1 sweet red pepper, sliced 2 tbsp oil for frying


Wash and drain chicken pieces. Add the rest of the ingredients to chicken excluding oil and stock. Rub in thoroughly and leave to marinate for 1 hour. Heat oil in a pan. Shake marinade from chicken and fry until golden brown. Drain off excess oil. Add the marinade and stock to the pan and cook on medium heat until chicken is tender. If desired, more Tex's Family Chicken Seasonings can be added to taste. Tex's Seasonings are ideally suited for use in gravies, stews, sauces, dips, soups and casseroles. To make a delicious gravy using Tex's Seasoning... After cooking meat, pour any excess fat from the pan leaving stock. Place the stock in a thick saucepan over a low flame. Add 1 tablespoon of Tex's Original Fried Chicken Coating to stock and stir well. If needed, more coating can be added to the stock. Simmer and check for consistency. If required, Tex's Tropical Multi-Purpose Seasoning can be added to taste.
