Preparation
Cook rice until tender (but not soft) and allow to cool.
Whisk eggs. Add 1 tbsp butter, margarine or oil to saucepan or wok and heat until hot. Add eggs and stir fry until lightly scrambled, remove egg and set aside.
Add remaining butter, margarine or oil to saucepan along with garlic and stir fry for 2 minutes. Add rice and stir fry for another 2 minutes. Add Tex's Family Chicken Seasoning, spring onions, mixed vegetables, sweet pepper, soy sauce and mushrooms and stir fry for another 5 minutes.
Finally, gently stir in eggs. Serve hot. |
